2 sticks butter, softened
1/2-cup sugar
1-teaspoon vanilla
1/4-teaspoon salt
2 cups all-purpose flour
In a medium bowl of an electric mixer beat the butter and sugar until light and fluffy. Add the vanilla. Mix the flour and salt by hand to the butter mixture until well mixed. Divide the mixture in half and wrap in plastic and chill for one hour. Roll each half on a floured board to 1/8-inch thickness. Using a 2 to 3 inch heart cookie cutter cut out cookies. Place on ungreased cookie sheet and bake in a preheated 350 oven for about 12 minutes until pale golden. Cool on cookie rack.
When I went searching for recipes for my blog hop, I realized my heroines don’t cook much. They aren’t busy fixing elaborate meals for their potential sweetheart. Elise in Unexpected Cougar puts a store bought pizza in the oven. Cinda in Perfect Stranger has the hero cooking for her. Teresa in Incognito has to turn off her spaghetti sauce when the police arrest her. Not even one of my characters makes an elaborate meal, not a one.
My most extravagant meal took place in Dangerous Curves in a French restaurant. Trust me; I had expert chef help to plan that meal. So why don’t my heroines cook? They all have careers and live alone. Two things that interfere with planning elaborate meals. The women often dine on microwave entrees, cereal and tacos. They aren’t against a meal out either.
Do my heroines reflect my lifestyle? Not really, I cook probably seven days a week with the occasional meal out. If I lived alone, maybe I would get by on cereal and Lean Cuisine. Still, I enjoy whipping up the occasional gourmet dinner maybe three or four times…a year. How about you?
